Gut Friendly Banana Oat Pancakes | Recipe

These gut-friendly banana oat pancakes are made with simple, whole ingredients and naturally sweetened with ripe bananas and a touch of Manuka honey.

Ingredients

• 1 pasture-raised egg
• 1 cup organic rolled oats
• ½ cup preferred milk (e.g. raw, almond, or coconut)
• 1 tbsp Manuka honey
• 2 ripe organic bananas
• ½ cup coconut flour
• 1 tsp cinnamon
• 1 tbsp organic unsalted butter (for cooking)

 

Method

  1. Soak the rolled oats in the milk for several minutes, or until softened.
  2. Add the egg, honey, bananas, and cinnamon. Mix until a smooth batter forms.
  3. Stir in the coconut flour until well combined.
  4. Heat a pan over medium–low heat and melt the butter.
  5. Pour approximately ¼ cup of batter per pancake into the pan. Cook for 2–3 minutes, or until bubbles form on the surface, then flip and cook for a further 1–2 minutes until golden.
  6. Serve warm with fresh fruit and a drizzle of honey, if desired.
