These gut-friendly banana oat pancakes are made with simple, whole ingredients and naturally sweetened with ripe bananas and a touch of Manuka honey.

Ingredients
• 1 pasture-raised egg
• 1 cup organic rolled oats
• ½ cup preferred milk (e.g. raw, almond, or coconut)
• 1 tbsp Manuka honey
• 2 ripe organic bananas
• ½ cup coconut flour
• 1 tsp cinnamon
• 1 tbsp organic unsalted butter (for cooking)
Method
- Soak the rolled oats in the milk for several minutes, or until softened.
- Add the egg, honey, bananas, and cinnamon. Mix until a smooth batter forms.
- Stir in the coconut flour until well combined.
- Heat a pan over medium–low heat and melt the butter.
- Pour approximately ¼ cup of batter per pancake into the pan. Cook for 2–3 minutes, or until bubbles form on the surface, then flip and cook for a further 1–2 minutes until golden.
- Serve warm with fresh fruit and a drizzle of honey, if desired.
